Is there any kind of log that IE keeps indicating when emails were sent? It seems that when I create an invoice, it automatically marks the invoice as printed or emailed even before I send it. Therefore, if i get distracted and I have to come back to the invoice I never know if I actually sent it.

No, the logs are not currently active, we will be turning them on in the next release.
